Answer
Use Dynamic Parameter (available in Tableau Desktop 2020.1 and later).1. Create a calculation field to get the latest date in the data source
Field name: ! Max Date
Calculation: {MAX([Order Date])}
2. Create a Parameter, set the [Data type] to [Date], and set [Value when workbook opens:] to [! Max Date]
