Issue
When running a Prep flow with a date field and a pivot of rows to columns, the following error can occur:
System error: TableauException: value - exception while parsing '#DD-YYYY-MM#' - Invalid datetime value

Resolution
Change the data type from date or datetime to string in order to perform the pivot. More information on this restriction and pivoting fields is available in the Tableau Online Help.Cause
